Gobi is led by young and energetic Georgian chef Jano Kolbaia. He began his culinary journey at an early age, working in some of Tbilisi’s top restaurants and mastering both traditional Georgian and Asian cuisines. Today Jano reimagines Georgian gastronomy with creativity and boldness, transforming classic dishes into modern interpretations with fresh flavors and presentation.
