Our aim is to present our customers with new flavours, techniques, dishes, drinks that merge from our experiences with Korean, Estonian and world kitchen. We strive for modern solutions while trying to respect the traditional ways we get our inspiration from.
Head chef
Kristjan Jekimov
Head Chef Kristjan Jekimov has served as the executive chef at Põhjaka Restaurant, which earned a Michelin Guide recognition in 2022. Before founding SADU, he delighted guests with his creative dishes at the popular Barbarea Restaurant. During his time at Põhjaka, Kristjan developed a deep interest in fermentation and pickling, where preserving garden and forest produce in jars became a natural part of his culinary craft. His grandmother, who lives in Kazakhstan, inspired him with her kimchi recipe, which laid the foundation for his passion for Asian-style fermentation. It is therefore symbolic that the first course on our menu features the restaurant’s own house-made pickles and ferments.
